Lacto-fermented Cranberry/Apple Relish

2 tart organic apples, peeled and chopped
3/4 cup Rapadura
1/2 cup water
1/4 cup whey (separate 1 quart grass-fed yogurt through a cloth-lined strainer for 8-12 hours)
1 T. Celtic sea salt

Simmer cranberries and apples in sugar, water and salt mixture for 15-20 minutes on low heat with the lid on.

Cool completely, then add 1/4 cup whey and 1 T. salt to mix and place in a large Mason Jar. Top off with a couple more tablespoons whey and ferment for 3 days at room temperature before transferring to the fridge.
