Swedish Meatballs w/ Sour Cream Gravy & Egg Noodles

1 1/2 lb. ground beef
1 lb. marrow bones, roasted w/ marrow removed
2 eggs, beaten
2-4 tablespoons tomato paste
1 head garlic, crushed
1 medium cipollini onion, grated or finely minced
several thyme stalks, stripped w/ leaves minced
1/3 cup crackers, ground finely
Worcestershire sauce
Celtic sea salt
several tablespoons tallow for frying

Mix all ingredients in a large bowl, form into small balls and set aside.  Heat cast iron skillet to medium/high heat, melt tallow and immediately begin browning meatballs.  Continue until all meatballs are cooked through, then remove and set aside.

Prepare Sour Cream Gravy.  Season with salt and Worcestershire, then add meatballs.  Serve over Egg Noodles.
