GAPS-LEGAL CHOCOLATES

Okay now that I shamelessly and publicly boasted of my amazing GAPS success in Tuesday’s post, my conscience dictates that in the spirit of full disclosure I confess my secret.  That’s right, you guessed it… chocolates. Not just any chocolates of course, but bona fide GAPS-legal chocolates; permission granted courtesy of this update from Dr. Natasha herself.

“Cocoa is SCD illegal. However, I find that many people can start having it occasionally on the Full GAPS Diet, once the digestive symptoms are gone. Find pure organic cocoa powder. Mixing the powder with some honey and sour cream makes a delicious dessert, and you can add it to your homemade ice cream or cakes. After trying it for the first time, observe your patient for any reactions. Cocoa is very rich in magnesium and some essential amino acids and, unless your digestive system is not ready for it, there is no need to avoid it.”

As I pen this gentle reader, it is with smears and smudges on my keyboard from typing while simultaneously devouring the very morsels you see in the photo above.  They are I assure you, every bit as irresistible as they may appear to your envious eye.  In conjunction with a steaming mug of Bulletproof Chai tea, my Christmas shopping mall nightmare is successfully postponed for a few more blissful minutes.

So let’s dispense with any further poetry and get right to the recipe, shall we?

GAPS-friendly Chocolates

(makes 2 mini-muffin trays)

*1/2 cup organic cocoa butter

*1/2 cup coconut oil

*1 cup cocoa powder

*1/4 cup raw honey

*2 teaspoons vanilla

*2 good pinches fine Celtic salt (a few pinches course salt for topping)

1. Melt cocoa butter and coconut oil on very low heat.

2. Stir in cocoa powder until smooth and well mixed.

3. Remove from heat and add honey, vanilla & salt and mix well.

4. Pour mixture into paper cup-lined mini muffin tins.

5. Top with a sprinkle of course Celtic salt.

6. Get creative and think festive: peppermint extract, crispy nuts, pomegranate seeds, etc…

7.  Refrigerate for at least an hour or two if you can stand to wait!

Consider this my Christmas gift to you, faithful Lardmouth follower.  All I ask is that you use this knowledge for good, because GAPS adherent or not, no one, friend or foe, will be able to refuse you anything your heart desires once they identify you as the source of such unspeakable pleasure.
